Skillet Monkey Bread with Garlic Butter

 

Whether you’re looking for a star side for tonight’s dinner or interested in trying your hand at homemade bread, this recipe will not disappoint. I’ve taken the pull-apart fun of monkey bread and given it the garlic knot treatment with a caramelized garlicky butter, parsley and a sprinkling of parmesan cheese. This super-easy bread would be a winner on spaghetti and meatball night, or served alongside your Easter ham. If you don’t have the ingredients (or time) to make your own dough, store-bought pizza dough is an excellent alternative.

Serves 4 to 6 as a snack or side

  • Nonstick cooking spray, for greasing

  • 1 pound homemade or store-bought pizza dough, cut into 1-inch pieces

  • 2 Tablespoons extra-virgin olive oil

  • 4 Tablespoons unsalted butter

  • 4 garlic cloves

  • Kosher salt and pepper

  • Finely chopped Italian Parsley, flaky sea salt and finely grated parmesan cheese (optional), for garnish

    1. Grease a medium cast-iron skillet (8- or 9-inches). In a large bowl, gently toss the dough pieces with the olive oil. Arrange the dough in the skillet in a single layer. Let sit in a warm place until the dough is beginning to puff slightly, 30 to 40 minutes.

    2. Preheat the oven to 375°. Bake the bread until the edges are golden brown and firm, 25 to 30 minutes.

    3. Meanwhile, in a small skillet, melt the butter over moderate heat. Remove from the heat. Finely grate the garlic into the butter, then return to the heat and cook, stirring occasionally, until the garlic is lightly toasted, about 30 seconds. Season with salt and pepper. 

    4. Brush the monkey bread liberally with the garlic butter. Sprinkle with parsley, flaky sea salt, ground pepper and finely grated parmesan cheese, if desired. Serve hot.
